I choose this cupcake because I wanted to try a filled cupcake, and we were having trouble getting the icing to have a good consistency for working with the Wilton icing tips.
I used a chocolate cake box mix with a marshmallow frosting recipe from The Gracious Wife.
Peanut butter filling:
- 3 Tbsp butter, softened
- 1 cup creamy peanut butter
- 2/3 cup powdered sugar
In the bowl of a mixer, beat butter until soft and fluffy; add peanut butter and mix well. Gradually add powdered sugar, beating until well-incorporated.
